[RECIPE] Scotch Egg with Gravy Sauce Recipe

INGREDIENTS
10 eggs, or quail eggs, hard boiled and peel it.
800 g of sausage or beef, grind until smooth.
1 small bunch fresh chives, finely chopped
Fresh 1 small bunch parsley, leaves picked and finely chopped
1 whole nutmeg
1 tablespoon English mustard
sea ​​salt to taste
ground black pepper to taste
flour, for dusting
150 g breadcrumbs
2 liters of vegetable oil
3 tablespoons vegetable or corn oil


INTRUCTIONS
1.      Put the first 8 eggs into a pan of cold water and bring to the boil. Boil for 3 to 4 minutes, then transfer to a bowl of cold water. Once cooled, carefully peel them.
2.      Put the sausage meat into another bowl with the herbs, a good grating of nutmeg, the mustard and a good pinch of salt and pepper. Give it all a good mix together then divide into 8 balls.
3.      Have 3 plates ready - one with a small handful of flour, one with the beaten eggs and a third with the breadcrumbs. To make the Scotch eggs, start by flouring your hands. In the palm of one hand, flatten one of the sausage balls into an oval-shaped pattie. Roll a peeled egg in flour, then pop it in the middle of the pattie. Gently shape the meat evenly around the egg, moulding it with your hands.
4.      Roll the meat-wrapped egg in the flour, shake off any excess, then dip into the beaten egg, followed by the breadcrumbs. Roll in the egg and breadcrumbs again for a really good coating.
5.      Heat the oil in a deep pan or deep fat fryer to about 150ºC/300ºF. If you have a cooking thermometer it’s a good idea to use it. Otherwise, test if the oil is hot enough by adding a piece of potato and leaving it for about a minute – if it sizzles and browns, it’s ready. Carefully lower the eggs into the pan and cook for about 4 minutes, turning them every so often, until golden. Remove with a slotted spoon and drain on kitchen paper. (If you’re worried about the meat being under-cooked, deep-fry the scotch eggs until they’re golden and crispy, then pop them in a hot oven for a couple of minutes.)
6.      Cool the eggs slightly, then arrange them on board with a good piece of Scottish Cheddar, some pickle and a few pickled onions.


Gravy Sauce Recipe

INGREDIENTS
1/2 cup vegetable oil
3/4 cup all purpose flour
1 tsp salt
1 tsp ground black pepper
4 cups milk

INTRUCTIONS
Heat the oil in a large skillet over medium heat. Whisk in the flour, salt and pepper until smooth.
Cook and stir over medium heat until browned about 10 minutes. Gradually stir in milk so that no lumps form, and continue cooking and stirring until thickened. If the gravy becomes too thick, you may thin it with a little more milk.

BAHAN
10 telur ayam kampong atau telur puyuh, kupas cangkangnya
800 g sosis atau daging sapi giling.
1 ikat kecil daun bawang, cincang halus
1 ikat kecil peterseli segar, petik daunnya dan cincang halus
1 butir pala
1 sendok makan mustard Inggris
garam laut secukupnya
baru lada hitam secukupnya
tepung terigu secukupnya
150 g tepung roti atau tepung panir
2 liter minyak sayur
3 sendok makan sayur atau minyak jagung

CARA MEMBUAT
1.      Pertama, masukkan 8 telur ke dalam panci air dingin dan didihkan. Didihkan selama 3 sampai 4 menit, kemudian angkat ke semangkuk air dingin. Setelah didinginkan, kupas cangkangnya.
2.      Masukan daging sosis ke dalam mangkuk lain dengan campuran bumbu, pala, mustard dan garam serta lada secukupnya. Aduk rata kemudian bentuk menjadi 8 bentu bola
3.      Siapkan 3 piring dengan 1 piring kecil tepung, satu dengan telur kocok dan ketiga dengan tepung panir. Untuk membuat telur Scotch, pertama baluri tangan Anda dengan tepung. Di telapak tangan, ratakan salah satu bola sosis menjadi pattie berbentuk oval. Gulung telur yang telah dikupas dalam tepung. Selimuti telur dengan daging sampai tekstur luarnya lembut.
4.      Celupkan adonan telur dan daging dalam telur kocok, lalu balur dengan tepung panir. Ulangi jika kamu ingin hasil yang lebih tebal.
5.      Panaskan minyak dalam wajan. Goring scotch egg sampai kuning kemasan.
6.      Dinginkan telur sedikit, sajikan dengan saus gravy.



Resep Saus Gravy
Bahan
1/2 cup minyak goreng
1/4 cup tepung
1 sdt garam
1 sdt lada hitam bubuk
4 cup susu cair

Cara Membuat
Panaskan minyak goreng di atas teflon. Kocok tepung, garam, dan lada hitam sampai tercampur rata.
Panaskan dan aduk terus sampai cokelat
Campurkan susu, lalu aduk terus sampai kekentalan yang diinginkan.
